Quesadillas filled with spinach, butter beans and avocado with a wasabi cream dressing.

Super quick lunch time quesadillas filled with spinach, butter beans, avocado and yummy Violife dairy free Pizza Cheese from Art of Zen Foods topped with cherry tomatoes, avocado, red onion and a wasabi cream dressing.

How to:

  1. Heat frying pan and drizzle with olive oil.
  2. Place tortilla flat on pan and top with your favourite cheese, veg etc.or follow my lead with spinach, butter beans and avocado
  3. Place another tortilla on top press down and fry off until the cheese starts to get gooey and delicious.
  4. Flip and brown the other side.
  5. Remove, cut, plate up and top with salad and dressing of your choice.

I opted for a creamy wasabi dressing which is simply wasabi and garlic powder, soy cream, squeeze of lemon, salt and pepper all blended together.
