MACRO BOWL 2 WAYS

A macro bowl has been my go-to quick meal lately. It’s just so easy to throw together a few staple ingredients plus some leftovers. You can make it sweet or savory and it’s always going to be super healthy, providing you with all the nutrients you need to be full of plant-power! Plus, you can make an infinite number of combos, never get bored and always have a tasty bowl of goodness. Here’s an example of a sweet and savory one I whipped up this week:

MACRO BOWL RECIPE

Savory:

Grain: Brown rice & quinoa blend

Green: Sautéed garlicky kale, spinach & green onions

Vegetable: Roasted pumpkin, cherry tomatoes, sun dried tomatoes, gherkins

Protein: Falafels, hummus

Superfood: Saurkraut

Seasoning: Lemon, dukka

 

Sweet:

Grain: Apple cinnamon date muesli

Fruit: Coconut, raisins, warmed berries, mango, kiwi, strawberries, pineapple

Protein & fat: Almond butter, coconut almond yogurt, cacao chia pudding

Superfood: Cacao nibs
