Healthy Beetroot Macaroons

This combination might sound a bit alien to a lot of people, where the flavours, in fact, compliments each other very well.

Beetroot powder has a sweet taste and it gives the healthy beetroot macaroons their distinctive vibrant colour.

Healthy Beetroot Macaroons

Quick and healthy beetroot macaroons.

Ingredients

  • 1½ cups ( 180 g ) desiccated coconut
  • 4 tablespoons raw honey or agave syrup to keep it vegan
  • 3 tablespoons extra virgin coconut oil
  • 2 tablespoons coconut flour
  • 3 teaspoons beetroot powder
  • 1 teaspoon vanilla extract
  • a squeeze of lemon or lime juice
  • pinch of sea salt

Instructions

  1. Add all ingredients to the food processor and mix until the dough starts to clump together. This will usually take around 30 seconds.
  2. The texture depends a little bit on the moisture of your desiccated coconut, if you feel that it’s too dry, add a little more coconut oil, in case it’s too wet you can add a bit more coconut flour.
  3. Use a measuring spoon or something similar that is round-shaped to form little macaroons.
  4. Place them on a parchment-lined board and freeze them until they go solid, now transfer to the refrigerator
  5. Enjoy.
